It's always a challenge when you have a craving for Thai food while on the Paleo diet. Traditional Pad Thai is a stir-fried rice noodle dish, a glycemic bomb! To kick your Pad Thai cravings, while keeping Paleo, check out the recipe below! Instead of noodles, we use a spiralizer to spiralize our zucchini. Let us know your thoughts!
- 4 medium zucchini spiralized
- 3 tsp. coconut oil
- 3 eggs whisked
- 4 tablespoons cilantro chopped
- 1/2 red onion chopped
- 1 pound chicken tenders cut into 3 pieces each.
- 1/4 cup cashews roasted and chopped
- 4 lime wedges to serve
Pad Thai Sauce
- 1/3 cup almond butter
- 1/2 cup coconut milk
- 1 lime squeezed
- 1 tsp powdered ginger
- 1 tsp powdered garlic
- 1 tsp apple cider vinegar
Place Pad Thai Sauce ingredients in a food processor and blend thoroughly.
Heat 1 tsp coconut oil to fry pan over medium heat. Add eggs and scramble. Place on a plate.
Heat 1 tsp coconut oil and add zucchini noodles to fry pan and saute on medium for 2-3 minutes. Add cilantro and eggs. Cook and additional 3 minutes. Add sauce and stir. Remove and place in a bowl.
Heat 1 tsp coconut oil in fry pan, add onion and saute. Stir fry chicken with the onion on med-high heat until thoroughly cooked.
Add Pad Thai mixture to the chicken. Add cashews to the top of the dish with lime wedges on the side. Garnish with parsley. Shrimp may be substituted for chicken, if desired.
